What is hanging weight?

After an animal is harvested, their skin, intestines, organs, hoofs, blood and head are removed. Then it is weighed again. This weight is the hanging weight. 

What is the actual weight I'll take home from the processor?

On average you can plan on taking home about 65% of the hanging weight. So, if the average is 50 lbs for the hanging weight of a whole lamb, you can expect to take home about 50 * .65 = 32.50 lbs of meat. 

How can I keep the organs, fat, offal, etc.?

Many use the organs or other parts of the animal for their meals, broth and stock. Fat is often rendered for lard or tallow. Be very clear with the processor about the items you'd like to keep. They will often get rid of whatever they can and you'll need to be proactive in asking them if they can keep those items back for you. 

How do I know when to give instructions to the processor about how I want my animal processed? 

We will give the processor your contact information and they will reach out to you or we will give you the processor's information for you to reach out to them, depending upon the processor's preference. 

What price can I expect to pay to the processor?

The harvest fee for a half lamb is about $110 and the base rate for cut/wrap fee is $1.50 per pound hanging weight. If you don't add any specialty requests, for a hanging weight of 50 pounds you can expect to pay $110 for the harvest fee plus $75 (50 lbs * $1.50) for the cut/wrap for a total of $185.00 ($50 + $100). 

How do I know when to pick up my meat?

We or the processor will reach out to you with those details.
